Our heritage
Wagyu heritage
Our Kimbara Cattle command a distinctive wagyu lineage spanning time and place, with origins in the idyllic valleys and mountains of Hokkaido in Japan.
This pedigree represents over fifty years of Japanese genetic improvement, immediately affording Kimbara Wagyu a pedigree available to very few.
The favourable Kimberley climate, dedicated pastoral team together with a carefully crafted vegetarian diet, all unite to deliver a wagyu product of universal appeal; with defining characteristics to meet the needs of the most discerning of palates.
Quality & taste attributes
With dedication and an unwavering commitment to excellence, Kimbara Wagyu has undergone professional critique at the University of Queensland, QAAFI, to produce an authentic representation of its distinctive aroma, taste, flavour and texture characteristics.
The findings of this work affirm the cherished tales of its unique qualities. The aroma reveals sweet, confectionery notes with hints of chocolate and caramelized butter, enriched with a touch of peppery gravy. The flavour offers a lingering umami buttery finish with a subtle smokiness, while the texture is extraordinarily tender and juicy, melting seamlessly in the mouth.
